Recently, Health Canada’s Food Directorate published the regulation “Modification to the List of Permitted Coloring Agents to Enable the Use of Caramel in Flavored Cheddar Cheese”. Caramel is added to the flavoring preparation improve the visibility and contrast of swirls in the cheddar flavored cheese. In this case, the caramel is not intended to impart color to the entire cheese but only to the swirls that appear in the cheese. Canada’s compositional standard for cheese already provides for the use of flavoring preparations in cheddar cheese, and caramel is currently permitted as a color agent in many standardized and unstandardized foods.
